This is adapted from Elaine’s recipe in Breaking the Vicious Cycle. I’ve made a few substitutions that my family seems to really enjoy. I think you’ll love them, too! The main difference is I use a little less flour and more nuts and raisins, for a richer taste. These cookies taste every bit as good as the sugary ones, but are better for you.
Melt butter and stir in the rest of the ingredients adding the flour, coconut, raisins and pecans last. Cook at around 315 F, until they just start to get a little brown. The temperature and time can vary depending on your oven and cookie sheet.
These are also delicious to dip in french cream or homemade yogurt!
